Looking for a light sandwich that fills you up? It may not sound like much, but a Bombay sandwich does just that at budget prices. You start with whatever bread you have at hand, and then there are just 5 more basic things we need: butter, green chutney, onion, potato, and tomato.

If you are feeling gourmet, you can always elevate this sandwich with multigrain or whole wheat bread, use exotic additional vegetable, use fancy sauces, but the true charm of a Bombay sandwich lies in its humble ingredients. You start with the most basic components available in any Indian kitchen, and you end up with a sandwich which is comfortable on any five-star table in the world.

It is buttery, it is crunchy, it is creamy, it is spicy, it fills you u and leaves you wanting more. What more would you expect from a sandwich? The secrets of the universe? We are not convinced that a good sandwich cannot give you that. Maybe we just haven’t found the right one yet.

We’ll tell you the basic recipe for a Bombay sandwich, but as we said, feel free to customize it as per your cravings.

  1. Take two slices of bread, butter both on both sides.
  2. Add a generous layer of green chutney on one bread.
  3. Cut red onion, tomatoes, boiled potatoes in chunky slices.
  4. Start layering the vegetables on top of the slice with green chutney.
  5. Sprinkle with salt, chaat masala (optional)
  6. Cover with the second buttered slice.
  7. Toast the scrumptious building of carbs and fresh veggies.
  8. Enjoy with ketchup, more green chutney

P.S. – If you end up customizing it, slices of capsicum, cucumber, chillies, beetroot, and paneer are great additions to a Bombay sandwich. Never cheese though. Cheese does not belong in a Bombay sandwich!

P.P.S. – If you want a healthier sandwich, be super stingy with the butter. By its very nature this sandwich is a healthy snack, so enjoy!
